Best Quick and Easy Chocolate Brownies Recipe

Luxury Chocolate Brownies

Brownies are my ‘go to’ comfort food and this recipe allows me to take it to the next level of gooey chocolatey goodness!

You will need

250g butter
400g fairtrade caster sugar
75g fairtrade cocoa
225g plain flour
1/2 tsp salt
1/2 tsp baking powder
1 tsp vanilla essence
4 eggs (lightly beaten)
75g walnuts (chopped roughly)
sweeties of your choice, the brighter the better!

I pretend that the sweets I use for the decoration are ‘leftovers’ from Halloween, but the truth is I keep them to one side!

Equipment you will need

Mixing Bowl
Kitchen Scales
2 Silicone Tray 8.5 x 8.5

Preheat the oven to 180 or gas mark 4

Step One

Soften the butter and the sugar together to form a smooth paste

Step Two

Sieve the flour, cocoa, baking powder and salt into the softened butter and sugar.

Step Three

Combine now with the eggs and vanilla

Step Four

Add the chopped walnuts to the mix and pour into the two silicone containers.

Step Five

I personally love brownies with the sweets added before going into the oven and they ‘cook’ alongside the brownies. So if you are including white chocolate buttons, M&M’s they are perfect as the baking takes them to the next level. Be aware if you are using midget gems that these are not vegetarian and it may mean that you have brownies which come out of the oven hotter than the surface of the sun!

Gooey decorated brownies, with nuts
You can go as crazy with the sweets as you like here! Or wait until after it has baked and then quickly pop them on top and wait for the melting to start.

Step Six

Leave in the oven for around 40 minutes or until the brownies have started to come away for the side and when you insert a knife into the centre it comes out moist but not wet. Do not be tempted to open the oven door as you may not lose height but you will lose moisture, which creates that gooey texture we all love so much!

Brownies full of extra gooey loveliness
This is what it looks like when you bake the sweets with the brownies, and it tastes divine!
