Slow Roasted Cherry Tomatoes

This is an easy way to add a touch of luxury to any recipe requiring tomatoes, and as you can freeze or can these it becomes a very convenient ingredient.

So for the perfect balsamic roasted cherry tomatoes you will need;
as many cherry tomatoes as you like
mixed herbs
salt and pepper
olive oil
1/2 tsp sugar
and balsamic vinegar if your family approve

For me it is really important that the kids can join in so you will benefit from a Children's Safety Kitchen Knife in your kitchen. These ones are sharp enough to get a clean cut of the cherry tomatoes but safe enough in the hands of little chefs! You will also need a Pyrex Glass Rectangular Roaster and a chopping board.

You can experiment with how ripe your cherry tomatoes are and use a rainbow in your cooking.

 

Easy steps

Step One
Set the oven to the lowest temperature it will go, gas mark 1 or around 70.
Step Two
slice the cherry tomatoes in half and lay out with the cut side facing up in the dish.
Step Three
Sprinkle over the oil followed by the dry ingredients.

Step Four

put them in the oven for around 4-5 hours, before then adding the balsamic vinegar. Perfect balsamic roasted cherry tomatoes take time and patience. Mainly because they start to smell divine within a  few hours and you need to hold back temptation.

You don’t need to be worried about an even covering on the tomatoes as you can spoon the mixture over the tomatoes throughout the slow cooking process.

This simple process elevates even the most bland of tomato into a sumptuous treat, perfect for salads, pasta and in my luxury ratatouille.

The perfect cherry tomatoes?

I’m super keen to become self sufficient and move towards a more eco-friendly lifestyle. So with this in mind we are growing a lot of cherry tomatoes this year. I plan on popping together the full ‘how to’ guide once they are all looking lush! Then I will use cherry tomatoes in every dish I ever make again! Including my gorgeous Feta and Avocado Guacamole which now that I am writing this I realise I haven’t made in forever!

If you are a newbie gardener I would recommend buying the plants. I don’t want to sound like one of those middle class hippies but the flavour of homegrown verses shipped in cherry tomatoes is real! These go really well on the side of a Vegetarian Lasagne and can be a sumptuous addition.
